1 lean beef roast (such as bottom round or rump)
Large baking potatoes cut in quarters
Carrots, peeled and cut in large chunks
Fresh sliced mushrooms (optional)
1 envelope dry onion soup mix or Dawn’s Brown & Season mix*
Place roast and vegetables in a shallow baking pan sprinkle with onion soup mix.
Cover with plastic wrap and cook in solar oven.
Cook until roast begins to release juices about
1 1/2 hrs. ( 2 hrs. if frozen).
Remove from oven and add vegetables around roast. Use pot holders and be careful, the steam is hot!
Recover with plastic wrap and cook another 2 hrs. or until roast is tender and vegetables are done.
Dawn’s Brown & Season Mix
1C. beef soup base (beef bouillon, not cubes)
¼ C. dried chopped Onion
1 T. dried minced garlic
1 T. dried parsley
1 tsp. black pepper
1 tsp. paprika
Mix all together and store in a jar.
It’s good rub for meat & poultry to help brown and season.
You can find most ingredients in bulk at some stores.
